Ingredients
  

  • For the Salad
  • 12 oz rotini or bowtie pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion finely diced
  • 1 cup bell peppers diced (any color)
  • ¾ cup black olives sliced
  • 1 cup mozzarella pearls or cubed cheese
  • ½ cup pepperoni or salami optional
  • ¼ cup fresh parsley or basil chopped
  • For the Dressing
  • ¾ cup Italian dressing store-bought or homemade
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions
 

  • Cook the Pasta
  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente.
  • Drain and rinse under cold water to stop the cooking process. Let cool completely.
  • Prep Ingredients
  • While pasta cools, chop vegetables, cheese, and meats. Add everything to a large mixing bowl.
  • Mix the Dressing
  • In a small bowl, whisk together Italian dressing, olive oil, vinegar, garlic powder, oregano, salt, and pepper.
  • Combine
  • Add cooled pasta to the bowl with toppings. Pour dressing over and toss until evenly coated.
  • Chill
  • Cover and refrigerate for at least 1 hour so flavors can blend.
  • Serve
  • Stir before serving. Add extra dressing if needed for freshness.
