Ingredients:

  • 6 cups mixed greens (baby spinach, arugula, or spring mix)
  • 1 cup fresh strawberries, hulled and sliced
  • ½ cup candied or toasted walnuts
  • ¼ cup crumbled feta or goat cheese
  • ¼ red onion, thinly sliced
  • 1 avocado, sliced (optional)

For the Dressing:

  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • Salt & black pepper, to taste

Instructions:

  1. Make the dressing: In a small bowl or jar, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper. Set aside.
  2. Assemble the salad: In a large bowl, combine the greens, strawberries, walnuts, red onion, cheese, and avocado if using.
  3. Toss & serve: Drizzle the dressing over the salad just before serving and toss gently to coat.
