Ingredients:
- 6 cups mixed greens (baby spinach, arugula, or spring mix)
- 1 cup fresh strawberries, hulled and sliced
- ½ cup candied or toasted walnuts
- ¼ cup crumbled feta or goat cheese
- ¼ red onion, thinly sliced
- 1 avocado, sliced (optional)
For the Dressing:
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- Salt & black pepper, to taste
Instructions:
- Make the dressing: In a small bowl or jar, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper. Set aside.
- Assemble the salad: In a large bowl, combine the greens, strawberries, walnuts, red onion, cheese, and avocado if using.
- Toss & serve: Drizzle the dressing over the salad just before serving and toss gently to coat.
