Tarragon is an underused herb that deserves a spot in your kitchen—its bright, distinctive taste pairs beautifully with creamy sauces and poultry. In this dish, it elevates a humble chicken breast into a restaurant-worthy meal. The sauce alone is irresistible: creamy, savory, and tangy with just the right herbal note to make it stand out.

Whether you’re serving it over buttery mashed potatoes, pasta, or steamed rice, Creamy Tarragon Chicken is one of those recipes that makes people think you spent hours in the kitchen—when in reality, it all comes together in under 30 minutes.

Creamy Tarragon Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt & pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1 small shallot, finely chopped
  • 1/2 cup dry white wine (or chicken broth)
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1–2 tablespoons fresh tarragon, chopped (or 1 teaspoon dried)

Instructions:

  1. Season & Sear: Season chicken with salt and pepper. Heat olive oil in a skillet and sear chicken on both sides until golden and cooked through. Remove and set aside.
  2. Sauté Aromatics: In the same pan, add butter, then sauté garlic and shallot until soft.
  3. Deglaze & Simmer: Pour in wine (or broth) and scrape up any browned bits. Let it simmer and reduce by half.
  4. Make Sauce: Stir in cream, Dijon mustard, and tarragon. Let simmer 2–3 minutes until slightly thickened.
  5. Combine: Return chicken to the pan, spoon sauce over top, and simmer another 3–5 minutes.
  6. Serve: Garnish with extra tarragon and serve over rice, mashed potatoes, or pasta.

Flavor Profile:

Tarragon adds a licorice-like, slightly sweet and peppery flavor, perfect for creamy or mustard-based sauces.
