- 1 tsp Italian seasoning
- 8 cups chicken broth
- 1 cup acini di pepe or small pasta
- 2 cups spinach or escarole
- Salt & black pepper
Instructions
- Combine meat, breadcrumbs, egg, cheese, seasoning, salt, and pepper. Roll into small meatballs.
- Bring broth to a boil and gently add meatballs. Cook 8–10 minutes.
- Add pasta and cook until tender.
- Stir in greens and simmer 2–3 minutes.

Brazilian Bean Soup (Caldo de Feijão)

Ingredients
- 2 cups cooked black beans (with liquid)
- 1 tbsp olive oil
- 1 small onion, chopped

- ½ tsp cumin
- ½ tsp smoked paprika
- 1–2 cups vegetable or chicken broth
- Salt & pepper
- Optional: bacon or sausage
Instructions
