A Bold, Flavor-Packed One-Pot Classic
Jollof Rice (often spelled Jollof) is one of the most iconic dishes in West African cuisine. Loved for its rich tomato base, smoky aroma, and perfectly seasoned rice, Jollof is a celebration dish served at parties, holidays, and family gatherings. From Nigeria to Ghana and beyond, every region has its own spin—but one thing remains the same: bold flavor.
This easy, authentic-style recipe delivers classic Jollof taste with simple ingredients you can find anywhere.
Ingredients
Jollof Base (Stew)
- 5 large ripe tomatoes (or 1 can crushed tomatoes)
- 1 red bell pepper
- 1 scotch bonnet or habanero (optional, for heat)
- 1 medium onion
- 3 cloves garlic
- 1-inch piece fresh ginger
- ¼ cup vegetable or canola oil
- 2 tbsp tomato paste
Rice & Seasoning
- 3 cups long-grain parboiled rice
- 3–4 cups chicken or vegetable stock
- 1 tsp thyme
- 1 tsp curry powder
- 1–2 bay leaves
- 1 tsp paprika or smoked paprika
- Salt and black pepper, to taste
Optional Add-Ins
- Grilled or fried chicken
- Shrimp
- Mixed vegetables (carrots, peas, green beans)
How to Make Jollof Rice
1. Blend the Pepper Mix
Blend tomatoes, red bell pepper, scotch bonnet, onion, garlic, and ginger until smooth. Set aside.
2. Cook the Jollof Stew
Heat oil in a large pot over medium heat. Add tomato paste and fry for 3–5 minutes until darkened slightly. Pour in the blended mixture and cook uncovered for 15–20 minutes, stirring occasionally, until the sauce thickens and the oil rises to the top.
3. Season the Sauce
Add thyme, curry powder, bay leaves, paprika, salt, and pepper. Stir well and let simmer for another 5 minutes.
4. Add Rice & Stock
Rinse rice until water runs clear. Stir rice into the sauce, then add stock just enough to cover the rice. Mix gently.
5. Cook Low & Slow
Cover tightly and cook on low heat for 20–30 minutes. Do not stir too often—let the rice absorb the flavor. Add a splash of stock if needed.
6. Create the Signature Smoky Flavor (Optional)
For party-style Jollof, allow the rice at the bottom to lightly toast (without burning) for that classic smoky taste.
