Ingredients:

For the Lemonade:

  • 1 cup fresh lemon juice (about 4–6 lemons)
  • ½ cup blueberry syrup (see below)
  • 4 cups cold water
  • ½ cup sugar (adjust to taste)
  • Ice

For the Whipped Blueberry Topping:

  • ½ cup heavy whipping cream
  • 2 tbsp blueberry syrup
  • 1 tbsp powdered sugar (optional)
  • A few drops of vanilla extract (optional)

Blueberry Syrup:

  • 1 cup blueberries (fresh or frozen)
  • ½ cup sugar
  • ½ cup water

Instructions:

  1. Make the Blueberry Syrup:
    • In a saucepan over medium heat, combine blueberries, sugar, and water.
    • Simmer for 10–15 minutes until the berries burst and the mixture thickens.
    • Strain through a fine mesh sieve and let cool.
  2. Prepare the Lemonade:
    • In a pitcher, mix lemon juice, sugar, blueberry syrup, and water.
    • Stir until sugar dissolves. Adjust sweetness to your taste.
    • Add ice to chill.
  3. Make the Whipped Blueberry Topping:
    • In a cold mixing bowl, whip the heavy cream until soft peaks form.
    • Add blueberry syrup, powdered sugar, and vanilla (if using).
    • Continue whipping until medium peaks form and mixture is light purple and fluffy.
  4. Assemble:
    • Pour blueberry lemonade into glasses over ice.
    • Top each glass with a generous dollop of whipped blueberry topping.
    • Optional: Garnish with fresh blueberries, lemon slices, or mint.
