Ingredients
- 4 cod fillets (6 oz each), fresh or thawed
- 2 tbsp Cape Cod Seafood Seasoning
- 2 tbsp olive oil or melted butter
- 1 lemon (zested and juiced)
- 1/2 cup panko breadcrumbs
- 2 tbsp chopped fresh parsley (optional)
- Lemon wedges, for serving
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish or line with parchment paper.
- Pat the cod fillets dry with paper towels. Place them in the baking dish.
- Brush each fillet with olive oil or melted butter. Sprinkle Cape Cod Seafood Seasoning evenly over the top.
- Combine breadcrumbs, lemon zest, and a pinch more seasoning. Press this mixture lightly on top of each fillet for a crispy crust.
- Bake for 15–20 minutes, or until the fish flakes easily with a fork and the topping is golden.
- Drizzle with fresh lemon juice, sprinkle parsley, and serve with lemon wedges.
